A classic format, the most versatile of the Italian cuisine, especially those striped, able to hold the sauce well. They adapt to all kinds of sauce.
PENNE WITH DUCK SAUCE:
Sauté the duck with carrots, a celery and a small onion. Pour in the wine and simmer for 15 minutes until its evaporation.
In the oil, brown the pieces of duck with washed and coarsely chopped vegetables, add salt and pepper.
Add the wine and simmer for 15 minutes by evaporating the alcohol from the wine.
Add the preserves and continue cooking for another hour. Season with salt and pepper. Boil the pasta al dente, add salt, and then mix it with the sauce. Finish the recipe with a handful of grated pecorino cheese. Drain it with the sauce.
