Zucchini and balsamic pastry

INGREDIENTS:

  • 3 zucchini
  • 4 eggs
  • 1 spoon of Parmesan cheese
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt
  • Parsley
  • Balsamic Vinegar of Modena I.G.P.

PREPARATION:

Wash the zucchini and cut them into slices. Cook them in a pan with a clove of garlic and a little oil.

When the courgettes are cooked, let them cool and then blend them into the mix or in a blender, adding the eggs, Parmesan, salt and pepper.

Pour the creamy mixture in some moulds and bake them at 180 degrees for about 15 minutes.

Put the pastry on a serving plate and glaze with Balsamic Vinegar of Modena I.G.P..
