What is a Bag in Box?
The Bag in Box (literally means “bag in the box”), also abbreviated as B-i-B, is simply a container consisting of a plastic bag placed inside a cardboard box.
At first glance, some might frown, thinking it’s just simple plastic. In reality, the bag is made of multi-layer plastic material, that is, metallized polyester with aluminum and polyethylene, designed for food preservation and suitable for contact with oil.

The bag is equipped with a dispenser tap which, once the appropriate slot is opened, comes out of the box and is locked in the slot.

A convenient and practical tap, which never leaves the oil inside in contact with oxygen, thus preserving the aroma and taste of EVO oil all year round.
This is the best packaging to keep your oil always fresh and ready to use. Ideal both for those who use it regularly, but especially for those who consume oil sporadically and do not want to end up with cans opened for months that have lost all aroma and taste.

Why not package oil in 5-liter cans?
The answer is simple. Cans, especially 5-liter ones, once opened, leave the oil in contact with air and, the longer the can remains open, the more the oil tends to oxidize, losing all its aroma and taste.
Using this type of packaging can nullify all the work and care from cultivation to harvest, up to storage (we bottle the oil only after receiving the order).
For this reason, I searched for a special packaging, ideal both for those who do not use much oil and for those who consume it daily, perfect for preserving the characteristics of the oil all year round, even once opened, and ready to be used at any time of the day for the right occasion.
How is our EVO oil made?
Tenuta Irené EVO oil is obtained exclusively from olives from our centuries-old trees.
The trees are cultivated directly by us.
I harvest the olives when they are still green, before they reach full ripeness, and mill them the same day to obtain an oil with a fruity aroma, intense and rich flavor.

Tenuta Irené EVO oil is not filtered, but I wait for the natural decantation of solid particles.
I store my extra virgin olive oil in stainless steel tanks.

The tanks are hermetically sealed with air floats that prevent the oil from coming into contact with oxygen.

The tanks are placed in a room that complies with the hygiene and health regulations required by the ASL, with a controlled temperature kept stable at 16 degrees 24 hours a day, 7 days a week.

Finally, to deliver always fresh oil, I chose to package it ONLY at the time of purchase.
Once an order is received, the oil is bottled and shipped within 24/48 hours, thus offering a product that manages to maintain the flavors and aromas of freshly pressed extra virgin olive oil even after several months, with maximum quality and freshness.
How to enjoy the 2 types of Tenuta Irené EVO oil?
To fully benefit from the polyphenols of the monovarietal Dritta EVO oil and taste the flavor and aromas of green olives of the monovarietal Leccino oil, they MUST be consumed raw.
This does not mean they cannot be used for cooking, but you should know that cooking destroys polyphenols and reduces the flavors of EVO oil.
So, by using these two types of monovarietal EVO oil for cooking, you not only lose their beneficial properties, but you also nullify all the work and care behind every single drop of Tenuta Irené EVO oil.
For this reason, these 2 types of monovarietal EVO oil must be consumed exclusively raw.
