Sustainability and Soil Care

We believe in sustainable and environmentally friendly agriculture. Our soil is carefully worked, using techniques such as mulching with straw and hay to reduce weeds and retain soil moisture. Drip irrigation allows us to optimize water use, ensuring our plants receive the right amount of water without waste.

Production process (see the pictures from the productsd for the different phases).

Phase 0: Tomato Cultivation All the tomatoes used for our artisanal passata are grown directly by us. The cultivation is organic and is carried out entirely by hand, just like in the old days. Cultivation begins between the end of April and the beginning of May by planting the tomato seedlings in the garden and will end in September with the harvest of the last tomatoes.

Phase 1: Harvesting The tomato harvest begins in July and will continue until early September. During this period, the tomatoes are harvested manually every week to avoid damage and are processed within 24 hours of harvesting to create a high-quality, completely natural passata without additives and with an explosive taste.

Phase 2: Washing The tomatoes are washed through two consecutive washes to completely eliminate all impurities. This phase is also carried out manually to ensure a truly thorough cleaning.

Phase 3: Cutting and Quality Control The tomatoes are cut to perform selection and quality control.

Phase 4: Cooking The tomatoes are placed in a stainless steel pot where they are cooked over low heat. During this phase, part of the water released by the tomatoes is removed to obtain a nice, thick passata.

Phase 5: Tomato Pressing The cooked tomatoes are pressed with a special, custom-made tomato press that manages to keep the consistency of the passata nice and thick.

Phase 6: Salting A pinch of salt is added to the passata because grandma always said it helps with preservation. For this reason, we continue to add a pinch of salt to our passata, one tablespoon of salt for every 35 liters of passata.

Phase 7: Bottling The passata is bottled.

Phase 8: Water Bath Preservation The bottles are immersed in water and boiled for 30-40 minutes for preservation.
