Pear and cheese conchiglie

In: First Courses On:


  • 100g of Conchiglie
  • 2 boiled pears
  • 20g of Parmigiano Reggiano
  • 80g of ricotta cheese
  • 2 spoons of millefiori honey
  • 2 spoons of sugar
  • Balsamic Condiment


Peel the pears, remove the core and cut them into cubes. Mix together the pears, the sugar and the balsamic vinegar to let them caramelise. Then mix together the pears, the Parmigiano, the ricotta cheese and the honey.

Boil the conchiglie in salted water and when cooked remove them from water and with the help of a teaspoon fill them one by one with the pear and cheese cream.

Put them on a plate and drizzle the Balsamic Condiment.
